  • Effects of Temperature on Finished Wines - eProvenance Research Featured in Technical Review of the Comité Champagne

    Champagne producers use all means at their disposal to obtain a quality product, in the vineyard as well as in the cellar. However, once the bottles are shipped out, it becomes harder to control the quality of the shipment through to the final consumer. Therefore is is important to know what influence the conditions of storage and transport might have. In numerous articles we have looked at the harmful consequences that light-strike (goût de lumière) can have, but what about temperature? A study was conducted in Champagne in 2014 by eProvenance, a company offering services for monitoring and analysis of wines storage and transport conditions around the world. in 2016, the Comité Champagne organizes a series of tests in order to determine the effects of exposure to cold and heat on the different components of Champagne.

Cependant, une fois la bouteille chargée dans le camion d’expédition, il devient plus difficile pour le producteur de maîtriser la qualité de l'acheminement jusqu’au consommateur final. Il est donc important de connaître l’influence des conditions de stockage et de transport sur les vins terminés, afin de prescrire les consignes adéquates aux distributeurs et metteurs en marché. Nous avons traité, dans de nombreux articles, les conséquences néfastes que peut avoir un goût de lumière, mais qu’en est-il des températures ?

    Due to the coronavirus pandemic, wineries have been forced to close their tasting rooms. No longer able to sell directly in person, wineries have to seek alternatives to keep up their bottom line. Clearly, given the “pantry-stocking” surge in wine sales, the consumer interest is strong. As a result, wineries with a well-established DTC business are expanding it further, and many of those that haven’t been doing much DTC are ramping up to increase sales. Relying more heavily on DTC is a both a challenge and an opportunity. Wineries will need to take new steps to protect their wine quality during transport, and in so doing, they have a chance to engage their customers and build their brand.
